These cookies are bad-ass if I do say so myself. The funnest part? Watching your kids light up like the forth of July when you put a big brand new box of CHOCOLATE graham crackers in the grocery cart.
My kids love anything chocolate. I mean, so do I of course and who doesn’t get excited thinking about chocolate flavored graham crackers with the little sugar crystals gleaming all over the tops?
Yup. Now you know what I am talking about.
Hawken and I made these cookies one day after we couldn’t decide whether to make peanut butter or chocolate chip. He is pretty creative when it comes to dreaming up dessert recipes and together we came up with this bad ass cookie which is like a perfect peanut butter cookie, soft but not too soft with just enough crispy bite to give you that rich buttery mouthful you crave in a peanut butter cookie. Plus it’s made from homemade Chocolate flour. How fun is that?!

We named them Mud Cookies because the batter turns this rich, brown mud color after you mix it all together. A cookie batter that screams KIDS: EAT ME. We dreamed up all kinds of things to do with this batter to eat it raw and make it scary for little brother. Gummy worms at Halloween, chocolate chunks for rocks, Reeces Pieces for stepping stones, chocolate sprinkles for sticks and debris. - 1/2 Cup Butter (salted) softened to room temp
- 1 Cup Peanut Butter
- 3/4 Cup All Purpose Flour
- 2 Cups Graham Crackers, processed to course flour Equivelent of about 1 1/2 sleeves of chocolate graham crackers
- 3/4 Cup brown sugar
- 1 Egg
- 1 Tbsp Vanilla Extract
- 1 Tsp salt
- 1 Tsp baking soda

- Preheat oven to 350 Degrees
- In a stand mixer or with a hand held mixer, combine the soft butter, peanut butter & brown sugar. Add the egg and vanilla and continue to mix until well combined. Set aside.
- In a separate bowl, add the baking soda, salt and AP flour.
- In a food processor, pulse the broken graham crackers until they become a course flour. Add to the bowl of dry ingredients and give it a quick stir to thoroughly incorporate.
- Slowly incorporate the dry ingredients into the wet with the mixer on low until just combined.
- Shape into 1 1/2 inch balls and arrange on a lined baking sheet. Flatten each ball with the back of a fork lightly creating a cross hatch design.
- Bake 8-10 minutes. Allow to cool on wire racks and eat up!
