The paloma (Spanish for “dove”) is a tequila-based cocktail. This drink is most commonly prepared by mixing tequila with a grapefruit-flavored soda such as Fresca, Squirt, or Jarritos and served on the rocks with a lime wedge. This drink also has the option of adding salt to the rim of the glass.

I made this drink with Trader Joe’s new Mango Lemonade which is really delicious, if you have not been to Trader Joe’s recently – it is full of all things Mango for the summer and I highly recommend picking up a container in the juice aisle. With that said, IF you do not have Trader Joes near you (I’m so sorry) try using regular lemonade and adding a little mango nectar if you feel so inclined. No big deal.
The piece d’resistance here and my new favorite summer cocktail enhancement is Mango Liqueur made by Patron in their Citronage line. I actually bought it by accident, I thought I was buying their Orange Liqueur which is like triple sec or the Patron version of Gran Marnier (but at a much happier price). I love this stuff because it adds that sweet-tart depth of flavor to drinks that a simple syrup just doesn’t do. The balance is just right without adding an overly sweet or cloying sugary layer. Plus, it is extra alchohol which is nice for obvious reasons but also and more importantly adds to the balance of flavor between the bite of the tequila and the sweetness of the lemonade. Think of it as adding salt to your dish.
This cool spin on a mango margarita is made using equal parts Tequila & Mango Liqueur, mango lemonade (or regular lemonade) and about 4 raspberries in a shaker. I shake it up with a couple ice cubes to help with a fast chill as well as to help break up the raspberries into beautiful pink bits and I top with a dash of club soda (a citrus soda would also work here if you prefer) with a freshly squeezed lime wedge + a few more raspberries to eat while drinking. YUM.
RECIPE UPDATE:
After I shot this, Ridge and I tried a sugar + salt rim one fine evening (ok late afternoon) and OH MY it was awesome and addictive. We finished our rims before our drinks were done. Could not stop. I am seriously doing this to all my cocktails right now. (We may or may not have also added a little tequila floater on top.) Simply run that lime wedge around the rim of your glass before you give it a final squeeze and dip your glass into a quick plate of sugar+salt. Then carefully add your ice cubes in and pour the drink over top. Sweet tart Lemon Raspberry Mango refreshingness. Ahh. Check out my cute mint sprig stirrers too. - 1 Tbsp kosher salt
- 1 Tbsp sugar in the raw regular sugar works too
- 1 Lime cut into wedges
- 2 shots tequila your favorite brand
- 1 shot Patron's Mango Citronage
- 1 cup Trader Joes Mango Lemonade Regular lemonade would be just as good or try using a little mango nectar
- 1 can club soda Citrus soda works well too
- 10 raspberries

- Combine sugar and salt on a plate
- Run a cut lime wedge along the edge of each glass and dip in the sugar + salt around the rim, carefully add ice to the top of each glass
- In a cocktail shaker, combine tequila, mango citronage, lemonade, 4 raspberries and a couple ice cubes. Shake vigorously for 20 seconds and strain over ice.
- Top each glass with club soda and garnish with a freshly squeezed lime wedge and 3 fresh raspberries.
